My pantry is not currently stocked, since i am building a new home, but we can do that together, and i will share some of my favorites that will store right on your pantry shelves.
Melting chocolate for baking is fairly easy but if not done right you can end up with a burned or grainy mess. Below are several methods for melting chocolate, each can be successful, but everyone has their own favorite.
Chocolate can be melted in the oven quite easily but you will need to watch it closely. It’s easy to get caught up in other baking chores and not realize that you have overheated the chocolate. Heat the oven to 110 degrees. Chop the chocolate and place in an ovenproof dish in the oven. Keep the oven door open slightly and check the chocolate regularly. It will take about an hour to melt completely.
This tried and true method uses two pots or a special double boiler pot. The bottom pot has about an inch or more of water in it and the top pot is a bit smaller and rests on the bottom pot. The water should be heated to just below simmering. Chop the chocolate and put it in the top pot. The chocolate should be stirred until melted. Be sure not to get any water in the chocolate, or it will come out grainy.
Microwave
Using the microwave to melt chocolate can be the fastest. It can also the most disastrous method since a couple of seconds of overheating can ruin the chocolate. Chop the chocolate and put it in a microwave safe bowl. Heat on 50% for 26 seconds to 1 minute. The amount of time needed, will depend on the amount of chocolate you are melting. You will have to watch the chocolate closely. When you see that it is turning shiny and before it is fully melted, remove it from the oven and stir until it melts fully. If it’s not completely melted, put it back in the microwave for another 20 seconds or longer, until your reach the desired consistency.
